Romain and Damien Bouchard founded their estate in 2016 and have quickly gained popularity for their energetic, yet refined wines which are farmed organically in the “heart” of the Chablis region on some of its best, chalkiest and purest soils.
100% Chardonnay harvested entirely by hand. Fermentation happens on indigenous yeasts, in either temperature-controlled tanks or French oak barrels. Wines in general spend some 18 months on fine lees; and are neither fined nor cold stabilized.
Aromas of lemon zest and lemon blossom, crushed oyster shells, light spice. Medium-bodied, fresh and long finish.
