Podere Fiorini is a small, family-run estate in Emilia-Romagna, devoted since the early 1900s to reviving dry, food-friendly Lambrusco.
100% Lambrusco Grasparossa with a small portion of Lambrusco di Lancellotta. Organically farmed red clay vineyards at 250m elevation in Castelvetro. Vines planted in 1986. Grapes are hand-harvested, fermented on skins for one week, then refermented in tank (Charmat method) for 60 days. Minimal residual sugar, bottled lightly filtered.
Deep purple color. Intense blackberry and black cherry with violet, herbs, and bitter roots. Dry and savory on the palate, with zippy acid, firm tannin, and dense mousse. Rustic, energetic, and built for rich foods.
