Established just after World War II, Hervieux-Dumez is one of the most historic Champagne houses. Founded by Henri Hervieux, these wines benefit from clay-limestone soils found throughout their estate vineyards across four Crus within the Montagne de Reims. Hervieux-Dumez champagnes are tasted and appreciated in France and around the world for their elegance, authenticity, and great finesse. Since 2020, the vineyards’ biodiversity has been supported by bees.
50% Chardonnay, 30% Pinot Noir, 20% Pinot Meunier. Fermented in stainless steel, full malolactic fermentation and extended aging on lees. Bottled with minimal dosage.
A pale gold appearance, exudes both smoked and mineral fragrances, aromas of dried fruits (roasted nuts and hazelnuts) with a subtle hint of gingerbread. Delicate texture, balanced acidity, long-lingering finish.
