Keltis is a family-run estate in Bizeljsko, Lower Styria, known for its natural, low-intervention wines and ciders rooted in biodynamic principles. With orchards and vineyards dating back over a century, the family focuses on native varieties and spontaneous fermentations to capture the authenticity of their landscape.
A field blend of Bobovec, Kanadka, Carjevič, Mošancelj, and Krivopecelj apples from 20–100 year-old trees planted at 350 m on schist, clay, and sandstone. Hand-harvested in mid-October, the fruit was pressed immediately, underwent spontaneous fermentation, and was bottled toward the end of fermentation for a pét-nat style finish. Light disgorgement occurred two months later; no SO₂ added. Dry profile.
Crisp, lively, and mineral-driven with notes of green apple skin, citrus zest, and wild herbs. The palate is dry, gently rustic, and refreshing, showing fine bubbles, savory complexity, and a clean, stony finish.
