Philippe and Diane Cauvin farm Château La Colombière with a deep commitment to Fronton’s native varieties and biodiversity. As leading champions of Négrette, they make expressive, soulful wines that reflect both history and progressive farming.
100% Négrette. Certified organic and biodynamic estate vineyards in the Fronton AOC, just north of Toulouse in Southwest France. Made via méthode ancestrale: the wine ferments partially in tank, then is bottled with natural sugars and native yeasts to complete fermentation in bottle. Unfiltered and typically released with sediment.
Light-bodied with fine bubbles. Aromatics of raspberry, white plum, and grapefruit lead to a refreshing palate with bright acidity and subtle texture from lees.
