Champagne Pierre Gerbais is a fourth generation domaine in the Aube. The winery and all the vineyards are located in Celles sur Ource, at the confluence of four valleys carved by the rivers Seine, Arce, Laigne and Ource. The domaine went organic in the 1990s.
Pinot Noir (55%, including 10% Coteaux Champenois), Chardonnay (22.5%), Pinot Blanc (22.5%) Limited yields, soils are worked mechanically, no chemical inputs. Hand harvested and sorted. Vinified and aged without added SO2. Primary fermentation and malolactic fermentation in tank. Secondary fermentation with cultured organic yeast strains in bottle, then aged for 30 months.
Aromas of red berries, pear and freshly baked bread. Medium to full-bodied, with flavors of of pink grapefruit sorbet, nectarine and a hint of whole grain toast
