Crafted in collaboration with Romain Paire, a biodynamic grower and key figure in Côte Roannaise. His family estate, Domaine des Pothiers, is known for soulful Gamay and sustainable farming. “Cowsmic” is a tribute to Romain’s moon-guided winemaking and his heritage as a cattle breeder for Michelin-starred chefs.
100% Gamay Saint-Romain from old vines (30–70 years) grown on granite-rich soils at 400–500 m elevation in Villemontais, in the southern Loire’s Côte Roannaise. Certified organic and biodynamic. Harvested by hand and sorted in the vineyard. Pressed directly, cold-fermented in stainless steel, then bottled post-fermentation to rest 6–10 months on slats before release.
Pale ruby with a pink mousse. Lifted aromatics of red berries and candied fruit. The palate is juicy, bright, and refreshing, with delicate sparkle and balanced acidity. Crisp, charming, and versatile at the table.
